Last weekend, Casey and I enjoyed a much-needed Valentine’s Day getaway that was an absolute dream. The Broadmoor is a stunning resort at the base of the Rocky Mountains in Colorado Springs, Colorado – a place we have wanted to visit forever. Even if only for one night, we felt spoiled and fancy, something that is rare these days. 😉 We missed the kids but they were in the best hands and had endless fun with my parents (we are so fortunate to live close to family). Let me take a second to fill you in on this amazing place. Its’ history dates back about 100 years, and is now a Forbes Five-Star and AAA Five-Diamond resort with several buildings, restaurants, a spa, golf course, swimming pools, not to mention the outdoor activities such as the Pikes Peak Cog Railway, Seven Falls, and a zipline Soaring Adventure. And how cute is the peachy pink color of the place? I DIE! It was beautiful on the inside and outside, and the service was top notch – the staff was so helpful and friendly. It was also a photographer’s dream. . . you know I snapped the day away.
It was evening when we arrived, so we got ready for our fancy dinner. We had reservations at the Summit restaurant and it did not disappoint. Casey ordered the Black Angus Hanger Steak and I ordered the herb roasted chicken with brown butter spinach, which was to die for. . . I need to try and replicate this at home. We also shared an Apple Mille-Feuille for dessert. It was drizzling rain that night, but not terribly cold, so after dinner we walked around and enjoyed the twinkling lights.

Ready to explore! I love my Valentine. Casey is the best husband on earth, I simply don’t know what I did to deserve him.
We then took a complimentary shuttle to Seven Falls, where we hiked a paved road to the falls and climbed a million stairs (hello workout!) to see some spectacular views. They had the cutest gift shops up there, not to mention a heaven-sent lady roasting cinnamon roasted peanuts and pecans (food tastes 10 times better in the mountains. . . it’s a fact). Can you believe they also have a restaurant sitting below the falls? It’s called Restaurant 1858 and we were happy to take advantage after our exploring. But you guys. . . just being in the mountains and breathing the air up there literally feeds my heart and soul.
It was a quick trip, but so rejuvenating and fun. We can’t wait to go back one day, and we encourage everyone to put it on their travel list. Until next time, Broadmoor! <3
